Everyday is Taco Tuesday! Recipes

Is there anything more brilliant than a taco? We even have a day of the week dedicated to it! You can enjoy your taco however you like, so mix up your favorite ingredients or try something new. With endless options, it is tough to decide! Here are 3 different ways to prepare a taco. Get ready for your very own Taco Tuesday!

Vegetarian Tacos with Avocado Cream

Vegetarian Tacos with Avocado Cream 

Ingredients: 

  • 1 small zucchini, diced
  • 1 small squash, diced
  • 1/2 medium red onion, diced
  • 1 cup cherry tomatoes, sliced
  • 1 medium red pepper, diced
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 teaspoons cumin
  • 1/4 teaspoon sea salt
  • Optional add-ins: (If you want some plant-based protein!)
    • black beans
    • tofu
    • chickpeas

Avocado Cream:

  • 1 ripe avocado 
  • 1/3 cup full fat, plain Greek yogurt
  • 1 tablespoon lime juice

Corn or flour tortillas

  • 2 ounces feta or goat cheese, to crumble on top!

Directions:

  • Preheat oven to 400 F.
  • Prepare all the vegetables as described in the ingredients list, and toss together with olive oil, minced garlic, sea salt, and cumin.
  • Roast the vegetables until tender and lightly browned, for about 20-25 minutes.
  • While the vegetables are roasting, prepare the avocado cream sauce by whipping together the avocado, Greek yogurt, and lime juice in a separate bowl.
  • Warm up the tortillas before assembling the tacos. You can warm the tortillas on the stove-top, in the oven, or using a microwave.
  • Add the vegetables first, followed by some avocado cream sauce, and a sprinkle of feta or goat cheese to finish. Enjoy!
Healthy Cod Fish Tacos

Healthy Cod Fish Tacos

Ingredients:

  • 4 pieces of 4 oz. firm codfish (Other white fish options such as snapper and mahi-mahi work as well)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 3/4 teaspoon seasoning of your choice (cumin, garlic powder, paprika, etc.)
  • Your favorite corn tortillas

For the slaw:

  • 1/4 cup chopped cilantro
  • 1 cup white cabbage
  • 1 cup red cabbage
  • 1/4 cup shredded carrots
  • 1 tablespoon olive oil
  • 1 tablespoon lime or lemon juice
  • 1/4 teaspoon salt

Directions:

  • Season the fish fillets with salt, ground cumin, and your choice of seasoning.
  • Toss all the ingredients for the slaw in a separate bowl, and keep refrigerated until tacos are ready for assembly.
  • Preheat a skillet and cook the fish for 5 minutes on each side, until fish is lightly browned and charred.
  • Break up the fish into large chunks.
  • Char the tortillas over an open flame on the burner or in a skillet for about 30 seconds on each side, then stack them on a plate.
  • Assemble the tacos by placing the slaw on each tortilla first, then top with fish and drizzle the extra juice from slaw to the tacos. (Optional: Add balsamic vinegar for added taste!)
  • Serve with lime wedges. Enjoy!
Yummy Ground Beef Tacos

Yummy Ground Beef Tacos (can also substitute with turkey meat)

Ingredients:

  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 tablespoon olive oil

Toppings:

  • 1-pint cherry tomatoes, quartered
  • 1/2 sweet onion, diced
  • 1/2 cup lime juice
  • 1/4 cup cilantro (optional)
  • 1 avocado, diced
  • Sharp white cheddar cheese, freshly grated
  • pinch of salt and pepper

For serving:

  • Corn or flour tortillas, warmed
  • Hard shells or tortilla chips (Optional)

Directions:

  • Prepare all toppings as described in the ingredients list
  • Preheat a skillet over medium heat. Add in some olive oil, and let heat up.
  • Once the skillet is hot, add the ground beef and break it apart using a wooden spoon.
  • Continue to stir and break apart the beef as it cooks, until it begins to brown.
  • Add in all of the seasonings to the skillet. Stir well to combine.
  • Keep stirring the beef until it is fully browned.
  • Char the tortillas over an open flame on the burner, or in a skillet for about 30 seconds on each side. Stack them on a plate until you are ready to assemble the tacos.
  • Serve the ground beef in the tortillas, and add your favorite toppings, such as avocados and cheese!
