Cinco De Mayo Guacamole & Salsa Recipes

Happy Cinco de Mayo! What better way is there to have a fiesta than with authentic & fresh guacamole and salsa you made from scratch!

Your family and guests will be craving more - so do make extra!

Homemade Salsa

Ingredients:

  • 6 medium-size vine-ripened tomatoes, stem removed
  • 2 jalapeno peppers
  • 1 poblano pepper
  • 1 cup green onion diced
  • 1 lime, juiced
  • 1 cup canned diced tomatoes
  • 1 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tbsp chicken bouillon powder or sea salt
     

Directions:

  1. Heat a large skillet to medium-high heat. Place tomatoes and peppers in the skillet.

  2. Continue to saute, rotating the vegetables occasionally, so several sides begin to blister. This will take around 20 minutes. Set aside to cool.

  3. Once cooled, chop off the stems of the peppers, and remove the seeds from the jalapeño. Note: you can keep some seeds for more heat in your salsa if desired. Cut the vegetables into large pieces.

  4. Place tomatoes, peppers, onions, lime, and canned tomatoes into a blender and pulse quickly until just mixed (about 5 seconds). Add garlic, cilantro, and bouillon. Pulse for another 15 seconds until well blended but chunky.

  5. Place in a large bowl and refrigerate until cooled before serving. Serve with your favorite Mexican dish or with chips.

Pro Tip!

  • This recipe tastes best after 24 hours. You can refrigerate it for up to 2 weeks.

Fresh-Made Guacamole

Ingredients

  • 3 large avocados, ripe

  • 1/2 small onion, finely diced

  • 2 Roma tomatoes, diced

  • 3 tablespoons finely chopped fresh cilantro

  • 1 jalapeno pepper, seeds removed and finely diced

  • 2 garlic cloves, minced

  • 1 lime, juiced

  • 1/2 teaspoon sea salt

Directions

  1. Slice the avocados in half, remove the pit, and scoop into a mixing bowl.

  2. Mash the avocado with a fork and make it as chunky or smooth as you'd like.

  3. Add the remaining ingredients and stir together. Give it a taste test and add a pinch more salt or lime juice if needed.

  4. Serve the guacamole with tortilla chips.

Pro Tips!

  • Look for large avocados for this recipe. If you can only find small avocados, feel free to add one more!

  • Use fresh limes rather than lime juice in a bottle for the best flavor. 

  • Store leftover guacamole in air-tight food storage containers to keep longer.
