Salad Recipes for Spring

The snow is gone and we're warming up as nature around us is blooming into vibrant Spring colors. So let's also liven up our lunches with healthy, tasty, and nutritious greens! Salads can have a bad reputation for being boring, but these recipes are sure to change your mind. Each is paired with a dressing too! They are sure to brighten up your day, get your tastebuds feeling refreshed, and leave you craving for more!

Here are some of our favorite salad recipes for spring:

Mixed Greens Salad Recipe Ingredients

Mixed Green Salad with Pecans, Goat Cheese, and Honey Mustard Vinaigrette

Refreshing, crunchy, and tasty! 

Salad Ingredients:

  • 1 pound mixed salad greens
  • 4 ounces goat cheese 
  • 4 ounces whole pecans 
  • 1/4 cup sweetened dried cranberries
  • 1 red bell pepper, cored and seeded, cut into thin slices

Dressing Ingredients:

  • 3/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste

Directions:

1. Preheat oven to 300F degrees. Prepare a baking sheet, and spread pecans evenly. Bake oven for 10-15 min.

2. While toasting the pecans, combine the olive oil, balsamic vinegar, honey mustard, minced garlic, and red pepper flakes in a bowl or a jar. Whisk or shake until the dressing is combined. 

3. In a separate large bowl, add in the washed mixed greens, goat cheese, dried cranberries, sliced red bell peppers, and the toasted pecans. 

4. Add 1/4 of the dressing, salt, and pepper into the large bowl, then toss. Add more dressing if desired.

Kale Caesar Salad Key Ingredients

Kale Caesar Salad

That delicious caesar taste with a vitamin-packed twist!

Dressing Ingredients:

  • 1 cup raw cashews 
  • 2 tablespoons extra virgin olive oil
  • 1 cup filtered water
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons apple cider vinegar
  • 4 tablespoons nutritional yeast
  • 2 tablespoons dijon mustard
  • 3 cloves garlic
  • Chili flakes
  • Black pepper to taste

Salad Ingredients:

  • Kale, chopped, de-stemmed
  • Optional toppings: Chicken, salmon, roasted chickpeas, eggs, walnuts, avocado, or any other protein of your choice! 

Directions:

1. In a blender, add cashews, olive oil, water, lemon juice, apple cider vinegar, nutritional yeast, mustard, garlic, pepper, and chili, then blend until creamy. Transfer dressing to a bowl or jar.

2. In a separate bowl, add the chopped kale leaves, pour the desired amount of dressing into the bowl, and massage the kale with your hands until all the kale is evenly coated with the dressing.

3. Add any optional toppings of your choosing. Enjoy!

Arugula Salad with Shaved Parmesan

So simple, yet so tasty!

Ingredients:

  • 2 bunches of arugula, washed, dried, and torn
  • 1/4 cup extra-virgin olive oil
  • 1/2 lemon, juiced
  • Salt and fresh black pepper
  • Chunk of Parmigiano-Reggiano
  • Optional toppings or proteins of your choice

Directions:

1. In a serving bowl, add the arugula and, combine with extra-virgin olive oil, lemon juice, and salt and pepper to taste. Toss until well mixed.

2. Using a vegetable peeler, shave thin, long strips of parmesan cheese onto the salad. 

3. Add your favorite topping into the salad if desired.

Butter Leaf Lettuce with Citrus Honey Vinaigrette

Tastes like spring in a bowl!

Dressing Ingredients:

  • 2 1/2 tablespoon lemon juice plus the zest of one lemon (zest before juicing)
  • 2 tablespoons lime juice plus the zest of one lime
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • Sea salt or kosher salt and freshly ground pepper

Salad Ingredients:

  • 3 heads butter lettuce
  • 1/2 cup fresh tarragon leaves, roughly chopped
  • Optional toppings or proteins of your choice

Directions:

1. Whisk together the lemon juice and zest, lime juice, honey, and dijon in a small bowl to make the dressing. Slowly drizzle in the oil, whisking constantly, to emulsify the dressing. Season with salt and pepper to taste.

2. Tear the lettuce into bite-size pieces. Place in a large bowl, and sprinkle in the tarragon and toss gently with the lettuce.

3. Toss the salad with just enough dressing to coat. Add in your favorite toppings or proteins of your choice.
