Potato Latke Recipe
Happy Hanukkah! The celebration is not complete without the crispy and delicious plate of latkes. Made of simple ingredients and deep-fried to perfection, they are sure to put a smile on anyone’s face! Serve them warm with sour cream and applesauce. Enjoy!

Ingredients:
- 1 lb. (around 2) Russet potatoes, peeled
- 2 Market Basket large eggs, beaten
- 1/2 cup Market Basket all-purpose flour
- 1 1/2 tsp. kosher salt, divided
- Canola oil, for frying
- 2 tbsp. freshly chopped chives
- Market Basket Applesauce
- Market Basket Sour cream
Directions:
- Using the medium holes on a box grater, grate potatoes. Transfer to a bowl of ice water until ready to use.
- Transfer to a large kitchen towel. Wrap the potatoes carefully, and twist or squeeze firmly to wring out as much liquid as possible. Loosen up the potatoes, then repeat, with another clean kitchen towel.
- In a large bowl, combine potatoes with eggs, flour, and 1 teaspoon of salt.
- In a large skillet over medium heat, heat about 1/8” oil until simmering. To test if oil is hot enough, sprinkle in some flour. If flour bubbles and dissolves immediately, the oil is ready.
- Add a few spoonfuls of potato mixture to the oil and pat down with a spoon to flatten. Fry until crispy and golden, about 3 minutes per side. Transfer to paper towels or a wire rack to drain, then sprinkle with remaining salt.
- Serve with chives, applesauce, and sour cream. Enjoy!
