Holiday Side Dishes

We’re getting into the holiday spirit and preparing for the most festive time of the year! With Christmas decorations to put up and presents to wrap, surely you could use some help preparing the menu for the big holiday. Take a look below for holiday side dish ideas you can try this year for your Christmas get-together!

Refreshing Winter Salad

Dressing Ingredients:

  • 1/4 cup reduced-fat mayonnaise
  • 1/4 cup maple syrup
  • 3 tablespoons white wine vinegar
  • 2 tablespoons minced shallot
  • 2 teaspoons sugar
  • 1/2 cup canola oil

Salad Ingredients:

  • 2 packages spring mix
  • 2 medium tart apples, thinly sliced
  • 1 cup pecan halves
  • 1 cup dried cherries
  • 1/4 cup thinly sliced red onion

Directions:

  1. In a small bowl, mix the dressing ingredients together except the oil. Then, gradually whisk in the oil until well blended.
  2. Cover the bowl, and refrigerate until ready to serve.
  3. Prepare a large bowl, and put in all of the salad ingredients together. Toss to combine. When ready to serve, add the dressing.

Honey Glazed Rosemary Carrots

Ingredients:

  • 3 medium carrots
  • 1 tbsp Market Basket extra virgin olive oil
  • 1 tbsp Market Basket honey
  • 2 fresh rosemary
  • Salt and Pepper, to taste

Directions:

  1. Pre-heat oven to 400F and prepare a baking sheet. 
  2. Peel the carrots, then place them on a baking sheet. Transfer to the oven, and roast for about 10 minutes.
  3. When finished, carefully remove the carrots out of the oven. On the baking sheet, cut them into medium-sized slices.
  4. Add olive oil, honey, and the remaining seasonings on top of the carrots.
  5. Place the carrots back in the oven for an additional 25 minutes.
  6. Transfer to a plate when finished. Enjoy!

 

Green Beans

Garlicky Green Beans

Ingredients:

  • 1/4 cup unsalted butter
  • 8 cloves garlic, sliced
  • 2 pounds green beans, trimmed
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper

Directions:

  1. In a large oven safe-skillet, heat the butter for 1 minute over medium heat.
  2. Add the sliced garlic and green beans sauté, mixing often, for about 10 minutes, or until tender. Sprinkle garlic with salt and pepper.
  3. Place an oven rack in the center of the oven, and turn the broiler to high.
  4. Place the skillet into the oven and broil the green beans for about 3-5 minutes, until slightly crispy and browned.
  5. When finished, remove from oven and serve immediately. 

 

Brussels sprouts

Brussels Sprouts and Quinoa Salad

Ingredients:

  • 3 tablespoons Market Basket olive oil, divided
  • 3 shallots, minced
  • 2 cups plus 2 tablespoons water, divided
  • 1 cup quinoa, rinsed
  • 1 cup fresh Brussel Sprouts
  • 1/2 cup dried cranberries
  • 1/4 cup pomegranates
  • 1/2 cup chopped walnuts, toasted
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions:

  1. In a small saucepan, heat 1 tablespoon olive oil over medium heat. When ready, add the shallots, and cook while stirring for 3 minutes.
  2. Add garlic; cook along with the shallot for 1 minute. Transfer shallots and garlic into a bowl.
  3. In the same saucepan, bring 2 cups of water to a boil. Add the quinoa, then reduce heat. Let the quinoa simmer while covered, until the liquid is fully absorbed, for about 12-15 minutes. Remove from heat; fluff with a fork, and let cool.
  4. Microwave Brussel sprouts with the remaining water in a bowl, covered, on high until tender for about 6-8 minutes, stirring every 2 minutes. Drain then let cool.
  5. When cool enough to handle, remove and separate leaves from sprouts. Discard the cores.
  6. Combine the cooled quinoa, Brussel sprouts leaves, cranberries, pomegranates, walnuts, and parsley. Whisk together the lemon juice, salt, pepper, and remaining olive oil. Stir in the shallots and garlic. Toss with the quinoa mixture.
  7. Refrigerate, covered, for about 20 minutes.
