Roasted Red Kuri Squash With Honey & Brown Butter
Ingredients
- 1 large (or 2 medium) red Kuri squash, peeled and diced large
- 1 tablespoon of salt
- 1 teaspoon of fresh cracked black pepper
- 2 tablespoons of canola oil
- 5 thyme sprigs with leaves removed
- 4 tablespoons of butter
- Juice of 1 lemon
- 1 cinnamon stick
- 2 star anise
- ½ cup of honey
Directions
- Preheat oven to 400 degrees F
- Peel the Kuri Squash, and dice it into large cubes
- In a large bowl, toss the squash with salt, black pepper, oil, and thyme leaves and roast on a parchment-covered baking sheet until light-brown and soft (20 min)
- Heat a small saucepot until very hot, then add the butter. It will start turning light brown almost instantly.
- Stir constantly until light golden brown.
- Add the lemon juice, cinnamon stick, and star anise. Remove from heat and stir in the honey.
- Arrange the roasted squash on a platter and drizzle with brown butter sauce.
