Makes: 2 Cups
1) Combine all the ingredients in a medium-sized saucepan, bringing to a boil over medium-high heat.
2) Cover the saucepan with a lid but leave it slightly ajar, and reduce the heat to a medium-low. Simmer for about 50 minutes and stir occasionally so that the bottom of the pan does not burn.
3) Once the mixture has thickened, remove from heat. Transfer the mixture into a food processor and pulse until smooth.
4) Transfer into canning jars or a heat-proof container. Refrigerate until ready to use.
