Salsa so good, you might forget the chips!
Just cut up the ingredients and mix them up! You can eat this with tortilla chips, or just by the spoonful – because it is that good, with loads of yummy nutrition in every bite. This salsa is best eaten fresh so make it right before it’s time to serve – in the unlikely case where there are leftovers, make sure to store your salsa in an air-tight container!
Ingredients:
- 1 cup plum tomatoes, diced
- 1/2 cup red onion, diced
- 1/2 or 1 jalapeño, seeded and chopped (Adjust to preference. Keeping the seeds will make the salsa hotter!)
- 1 ripe avocado, peeled, cored, and diced
- 1 table spoon olive oil
- 1 table spoon fresh lime juice
- 1 clove garlic, finely minced
- 1/4 teaspoon salt and black pepper each, adjust to taste
- 1/2 cup cilantro, minced
Instructions
- Dice the tomatoes and place them in a strainer or colander to drain excess liquid.
- Dice the red onion, and place in a strainer or colander. Rinse under cold water to remove bitterness.
- Prepare all remaining ingredients as noted above.
- In a medium bowl, add the avocado, tomato, onion, jalapeño, and cilantro. Gently toss to combine.
- Drizzle olive oil, and lime juice. Add garlic, salt, and black pepper.
- Enjoy with chips, on its own, or with meals such as grilled chicken!
