Delicious Tomato Avocado Salsa Recipe

Salsa so good, you might forget the chips!

Just cut up the ingredients and mix them up! You can eat this with tortilla chips, or just by the spoonful – because it is that good, with loads of yummy nutrition in every bite. This salsa is best eaten fresh so make it right before it’s time to serve – in the unlikely case where there are leftovers, make sure to store your salsa in an air-tight container!

Ingredients:

  • 1 cup plum tomatoes, diced
  • 1/2 cup red onion, diced
  • 1/2 or 1 jalapeño, seeded and chopped (Adjust to preference. Keeping the seeds will make the salsa hotter!)
  • 1 ripe avocado, peeled, cored, and diced
  • 1 table spoon olive oil
  • 1 table spoon fresh lime juice
  • 1 clove garlic, finely minced
  • 1/4 teaspoon salt and black pepper each, adjust to taste
  • 1/2 cup cilantro, minced

Instructions

  • Dice the tomatoes and place them in a strainer or colander to drain excess liquid.
  • Dice the red onion, and place in a strainer or colander. Rinse under cold water to remove bitterness.
  • Prepare all remaining ingredients as noted above.
  • In a medium bowl, add the avocado, tomato, onion, jalapeño, and cilantro. Gently toss to combine.
  • Drizzle olive oil, and lime juice. Add garlic, salt, and black pepper.
  • Enjoy with chips, on its own, or with meals such as grilled chicken!
