Bunny Veggie Tray
Get ready for Easter with this healthy and adorable Bunny Veggie Tray!
Ingredients
For the Veggie Tray:
- 1 cup cauliflower
- 1 cup broccoli
- 4-5 stalks of celery, cut into 3” sticks
- 1 sleeve of Ritz Crackers
- 1/2 cup cube cheese
- 1/2 cup baby radishes, cut into thin rounds
- 1/3 cup baby carrots
- Half a cucumber, cut into thin rounds
- 1 red bell pepper, thinly chopped
- 1/2 pint grape tomatoes
- 6 pieces of asparagus, cut into 4” stalks
- 3-4 pitted kalamata olives
For the Dill Vegetable Dip:
- 1 cup mayonnaise
- 1 cup sour cream
- 1 tablespoon dried parsley
- 1-1/2 tablespoon dill
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1 tablespoon Worcestershire sauce
- 2 teaspoon freshly squeezed lemon juice
- 1/2 teaspoon pepper
Instructions
- In a small mixing bowl, combine all of the ingredients for the dill vegetable dip. Stir until well combined. Place in the refrigerator to let settle.
- On a large tray or platter, place a medium-sized ramekin in the center. On opposite sides of the ramekin, place the cauliflower and broccoli first.
- Remove half a sleeve of crackers and place them on the tray for the ears. You will want to make two lines of crackers for each ear, with 1-2 crackers at the very tops of the ears to round off the shape. Place the front of the crackers facing inwards, towards one another.
- Align the cut celery on the outer side of each ear to secure the crackers from sliding. Place the cubed cheese in the middle of each ear.
- Begin adding the remaining vegetables. Align the radishes next to the celery on both sides, then carrots, then cucumber.
- Fill in the remaining space with red bell peppers and tomatoes.
- Remove the dip from the refrigerator, and fill the ramekin, smoothing out the surface.
- Create the bunny face by putting two kalamata olives in the upper 1/3 area of the ramekin for the eyes. Place a grape tomato in the very center for the nose.
- Slice a kalamata olive in 3 thin pieces, longways. Assemble the mouth.
- Take 3 asparagus on each side of the grape tomato, and make the whiskers. Enjoy!
