Tomato and Mozzarella Salad with Balsamic Reduction
A summertime favorite! Made with sweet ripe tomatoes, pillowy soft mozzarella, and fresh basil. Serves 5-10.
Ingredients:
- Hothouse tomatoes (beefsteak)
- Fresh mozzarella cheese
- Fresh basil leaves
- Extra virgin olive oil
- Balsamic glaze
For glaze reduction:
- Bottle of balsamic glaze (quick and easy!) or Balsamic Vinegar
Directions:
- If you wish to make your own glaze, add balsamic vinegar to a small saucepan and bring to a simmer over medium-low heat. Simmer, partially covered, for about 20 min or reduced to a thicker glaze. If not, skip this step and use the balsamic glaze.
- Slice the tomatoes and mozzarella into 1/4 inch thick rounds.
- Arrange the basil leaves in an alternating pattern in a serving dish. Place in a vertical pattern. Tomato, moss, basil…one after the other!
- Drizzle the salad with olive oil and balsamic glaze
- Season with salt and pepper. Serve right away. Best at room temperature!
Spinach, Tomato, and Corn Salad
Serves 4.
Ingredients:
- 2 ears of corn, husks, and silk removed
- 1 large tomato, chopped
- 1/2 cup chopped English cucumber
- 1/2 cup chopped sweet onion
- 2 tbsp each chopped fresh basil, mint, flat-leaf parsley, and dill
- 1 tsp chopped garlic
- 1 tsp ground cumin
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- Salt and freshly ground pepper
- 5 oz baby spinach leaves
Directions:
- Hold each ear of corn upright, stem and down, in the center of a wide, shallow bowl and cut off the kernels.
- Add the tomato, cucumber, and onion to the corn. Add the basil, mint, parsley, dill, and garlic.
- In a small dry frying pan over medium-low heat, warm the cumin just until fragrant, for about 20 seconds. Transfer to a small bowl.
- Add the olive oil, vinegar, 1/2 tsp salt, and a grinding of pepper and whisk together until a smooth dressing forms.
- Add the dressing to the corn-tomato mixture and toss to coat. Add the spinach, toss again, and serve!
Quick Oven-Roasted Tomatoes Recipe
Bursting with flavor, a quick and easy way to enjoy cooked tomatoes! Pair with your favorite protein or over a plate of pasta! Serves 6.
Ingredients:
- 2 lb smaller tomatoes, halved
- 2 to 3 garlic cloves, minced
- kosher salt and black pepper
- 2 teaspoon fresh thyme, stems removed
- 1 teaspoon sumac
- Extra virgin olive oil
Directions:
- Set oven to 450 degrees
- Cut the tomatoes in halves or quarters, depending on the size.
- In a large bowl, toss the tomato halves with a good drizzle of quality extra virgin olive oil, salt, and black pepper, a couple of minced garlic cloves, fresh thyme, and any spices of your choice.
- Spread the seasoned tomatoes, flesh side facing up, on one large sheet pan (arrange them in a single layer).
- Roast for 30 minutes or until the tomatoes are tender and done to your liking!
Orzo Salad with Basil and Heirloom Tomatoes
Serves 6-8.
Ingredients:
- 1 lb mixed heirloom tomatoes of various sizes, including cherry tomatoes
- Salt and freshly ground pepper
- 1 lb orzo pasta
- 2 tbsp extra virgin olive oil
- 1 tsp red wine vinegar
- 1/2 cup fresh basil leaves, minced, plus 4-6 whole leaves for garnish
Directions:
- Cut large or medium tomatoes into 1/2- inch cubes. Halve the cherry tomatoes. Set aside
- Bring a large pot of salted water to a boil. Add in the orzo. When the water returns to a boil, reduce the heat to medium and cook until the pasta is al dente, according to package directions. Drain and place in a large bowl.
- Add the tomatoes, 1/2 tsp salt, oil and vinegar, and 1 tsp pepper, and turn gently until all the ingredients are well mixed. Add half of the minced basil and turn again until well mixed. Garnish with the remaining minced basil and the whole leaves. Serve at room temperature!
