Roasted Red Kuri Squash With Honey & Brown Butter

Ingredients

  • 1 large (or 2 medium) red Kuri squash, peeled and diced large
  • 1 tablespoon of salt
  • 1 teaspoon of fresh cracked black pepper
  • 2 tablespoons of canola oil
  • 5 thyme sprigs with leaves removed
  • 4 tablespoons of butter
  • Juice of 1 lemon
  • 1 cinnamon stick
  • 2 star anise
  • ½ cup of honey

Directions

  1. Preheat oven to 400 degrees F
  2. Peel the Kuri Squash, and dice it into large cubes
  3. In a large bowl, toss the squash with salt, black pepper, oil, and thyme leaves and roast on a parchment-covered baking sheet until light-brown and soft (20 min) 
  4. Heat a small saucepot until very hot, then add the butter. It will start turning light brown almost instantly.
  5. Stir constantly until light golden brown.
  6. Add the lemon juice, cinnamon stick, and star anise. Remove from heat and stir in the honey.
  7. Arrange the roasted squash on a platter and drizzle with brown butter sauce.
