Caramelized Butternut Squash

Ingredients

  • 2 medium-sized butternut squash (4 - 5 lb)
  • 6 tablespoons of melted unsalted butter
  • 1/4 cup of packed light brown sugar
  • 1 1/2 teaspoons of kosher salt
  • 1/2 teaspoon of freshly ground black pepper

Directions

  1. Preheat the oven to 400 degrees F.
  2. Prepare the squash by cutting off and discarding the ends of each butternut squash. Peel, then cut in half lengthwise, and remove the seeds.
  3. Cut the squash into around 1.5-inch cubes. Place them on a baking sheet.
  4. Add the melted butter, brown sugar, salt, and pepper, then toss all the ingredients together and spread in a single layer on the baking sheet.
  5. Roast for 45 to 55 minutes, until the squash is tender and the glaze begins to caramelize. Turn the squash a few times with a spatula so that the squash browns evenly.
